Health eCooking: Chicken Sandwich With Avocado Spread

An easy avocado spread is a healthy way to add creaminess to your chicken sandwich without high fat mayonnaise. This heart healthy chicken sandwich is packed with protein and healthy fats.

Ingredients

  • 2 light, whole grain rolls
  • 4 leaves romaine lettuce
  • 1/2 tomato, sliced
  • 2 slices red onion
  • 2 cooked chicken breasts (6 oz each)
  • 1/8 tsp unrefined sea salt
  • 1/8 tsp black pepper
  • 1 ripe avocado, pitted, peeled and mashed

Preparation

  • On the bottom half of each roll, layer lettuce, tomato, red onion and chicken.
  • Season chicken with salt and pepper.
  • Spread mashed avocado on top half of roll and place on top of chicken.
