Health eCooking: Wild Berry Salad with Chocolate Balsamic Dressing

Here’s a beautiful spring salad that combines fresh berries, mandarin oranges and sliced almonds over mixed greens, dressed with a drizzle of chocolate balsamic vinaigrette. Easy to prepare and delightful to serve, this healthful spring salad is an elegant first course for your formal dinner parties and luncheons, and a special treat for your family any day of the week.

Ingredients – Salad

  • 3 fresh strawberries
  • 4 blackberries
  • 4 raspberries
  • 10 blueberries
  • 5 mandarin orange segments
  • 1 tsp sliced almonds
  • 5 leaves of fresh basil
  • 1 cup mesclun greens

Ingredients – Dressing

  • 3 Tbsp balsamic vinegar
  • 1 Tbsp chocolate syrup
  • 4 oz of canola oil
  • 1 tsp minced shallots
  • Pinch of salt

Preparation

  1. Mix all of the dressing ingredients together well and set aside.
  2. Combine all salad ingredients evenly on the mesclun greens and top with almonds.
  3. Drizzle salad with the chocolate balsamic dressing.
